A showstopping summer sweet treat doesn’t have to take all afternoon to make. In fact – it doesn’t require any baking or cooking at all! This watermelon pizza uses a big slice of watermelon for the “crust” and a sweet and citrusy cream cheese frosting for the “sauce” that is topped off with berries, kiwi and fresh mint.
The creamy sauce combines Neufchâtel cheese (or reduced fat cream cheese), non-fat Greek yogurt, orange juice and powdered sugar for a lightly sweetened spread – perfect for holding all your fruit toppings in place. Customize this pizza with your favorite seasonal fruits and herbs. Before topping your pizza, be sure to slice your watermelon into eight portions for mess-free serving! Yield: 8 servings
Ingredients:
2-inch-thick slice watermelon (from the middle of a seedless watermelon)
4 ounces Neufchâtel cheese
1/2 cup non-fat Greek yogurt
1/4 cup powdered sugar
1 Tablespoon orange juice
6 strawberries, sliced
1 kiwi, cubed
16 blackberries
16 raspberries
16 blueberries
8 mint leaves
Directions:
Cut watermelon round into 8 wedges. Put wedges back into round shape on a plate or platter.
Use a hand mixer to blend Neufchâtel cheese, Greek yogurt, powdered sugar and orange juice in a small bowl.
Using a spatula, spread yogurt mixture in an even layer over the watermelon. Distribute fresh fruit on top. Garnish each piece with a mint leaf.
