Ingredients:
1/2 cup (about 12 pieces) cubed avocado
6 ounces (about 12 pieces) cooked gnocchi
12 cherry tomatoes
12 small basil leaves
1 Tablespoon bottled balsamic vinegar glaze
Directions:
On a short skewer or toothpick, spear a tomato, a piece of gnocchi, a piece of avocado and a basil leaf. Repeat to form a total of 12 skewers. Arrange on a plate and drizzle with balsamic vinegar glaze.

Turkey Burger Mini Skewers
Yield: 12 servings
Ingredients:
1/2 pound ground turkey
1 Tablespoon minced garlic
1/2 teaspoon black pepper
1/2 cup romaine lettuce, cut in 2-inch pieces
12 cherry tomatoes
3 slices fat-free American cheese, cut into quarters
Directions:
Preheat oven to 375º F. In a medium-size bowl, combine ground turkey, garlic and black pepper. Form the meat mixture into 12 meatballs. Place on a baking sheet lined with parchment paper and bake for 10-15 minutes, or until internal temperature reaches 165º F. Remove from oven and let cool.
