When that sweet tooth hits, sometimes all you need is a single-serve treat. Less is more, especially when it comes to dessert. These mini pudding cups are semi-homemade, and each recipe combines fresh ingredients with convenience products. They are a delicious dessert to serve to guests in these adorable small mason jars, or as an "any day" treat in whatever small bowls you've got. 

Dessert also does not have to take all day to make, especially when you use store-bought shortcuts like instant pudding mix. And making small batches means you can have a few a week and never be bored! They are fast and just enough to curb that sweet tooth craving.

Kids love to help make (and eat) these too -- put them to work whisking the pudding mix, crumbling up the cookie or graham crackers, layering the ingredients and finishing with a pretty garnish on top. While bananas and oranges taste delicious year-round, summertime is berry season, so be sure to add extra raspberries or strawberries.

The Ideal Party Treat

Mini pudding cups are perfect for a summer party or BBQ because you make them a day or two in advance, which gives you more time the day of your event. Once you have made the individual mini pudding cups, cover, and keep them refrigerated. Save the whipped cream and individual garnish until you are ready to serve. If you have leftovers, you can keep them covered in the refrigerator for 3-4 days.

Mini Banana Pudding Cups

Yield: 6 servings

Ingredients:

1 package fat-free, sugar-free instant vanilla pudding mix
2 cups fat-free milk
1 3/4 cups fat-free whipped topping, divided
18 vanilla wafer cookies
2 medium bananas, sliced
Pinch of ground cinnamon

Directions:

Prepare pudding according to package directions. Refrigerate for 30 minutes. Fold in 1 cup softened whipped topping with pudding. To assemble each cup, crumble 2 vanilla wafers and layer wafer crumbs, 1/3 of a banana, sliced (reserve one slice for top), and 1/2 cup pudding mixture. Top with 2 Tablespoons whipped topping, a vanilla wafer, a banana slice and a sprinkle of cinnamon.

Ingredients:

1 package fat-free, sugar-free instant vanilla pudding mix
2 cups fat-free milk
1/2 teaspoon almond extract
18 vanilla wafers
1 3/4 cups fat-free whipped topping, divided
1 cup sliced strawberries
1/2 cup slivered almonds

Directions:

Prepare pudding according to package directions. Refrigerate for 30 minutes. Add almond extract and 1 cup softened whipped topping to pudding and mix gently to combine. To assemble each cup, layer 3 vanilla wafers (broken in half as needed), 2 Tablespoons strawberry slices, and 1/2 cup pudding mixture. Top with 2 Tablespoons whipped topping, slivered almonds, and additional strawberry slices.

2 sheets chocolate graham crackers, crumbled
1 cup fresh raspberries
Pinch of powdered sugar

Directions:

Prepare pudding according to package directions. Refrigerate for 30 minutes. Fold 1 cup softened whipped topping into pudding. To assemble each cup, layer 2 Tablespoons graham cracker crumbs, 2 Tablespoons raspberries, and 1/2 cup pudding mixture. Top with 2 Tablespoons whipped topping, an additional raspberry, and a sprinkle of powdered sugar.

Zest of one orange
6 orange slices
Pinch of cocoa powder

Directions:

Prepare pudding according to package directions. Refrigerate for 30 minutes. Fold 1 cup softened whipped topping into pudding. To assemble each cup, layer 1 1/2 Tablespoons graham cracker crumbs and 1/2 cup pudding mixture. Top with 2 Tablespoons whipped topping, 1 teaspoon chocolate chips, orange zest, 1 orange slice and a sprinkle of cocoa powder.
