Recipe & Video: Chocolate Pie

There’s certain balancing act required with chocolate desserts. Too rich and you can’t enjoy more than a few bites. Too sweet and it can make you feel sick. That’s why this guilt-free chocolate pie is your best bet. Chocolate pudding and a baked graham cracker crust provide just enough of that sweetness you’re looking for while the fresh raspberries are the perfect thing to cut the richness.

Just because a dessert is labeled “healthy” doesn’t mean that it has to sacrifice on flavor. This particular pie has not one, but two layers of creamy, chocolate pudding made with fat-free cream cheese and milk instead of full-fat ingredients. This way, you can still get your chocolate fix for under 200 calories per serving.

Looking to enjoy for Valentine’s Day or as a chocolatey treat after a healthy meal? Make sure to give yourself enough prep time. This dessert needs at least an hour in the fridge to set so you can easily layer up the chocolate pudding.

Chocolate Pie 

Yield: 20 servings

Ingredients:

5.9-ounce package instant chocolate pudding mix
3 cups fat-free milk
1½  cups finely-crushed graham crackers (about 21 squares)
¼ cup margarine
1 Tablespoon cocoa powder
5 Tablespoon sugar
8 ounces fat-free cream cheese, room temperature
1 cup fresh raspberries

Directions:

Preheat oven to 400 degrees F.

In a medium-sized bowl, whisk together chocolate pudding mix and fat-free milk for 2 minutes. Place in refrigerator to chill.

In a different medium-sized bowl, combine crushed graham crackers, margarine and cocoa powder and mix well. Transfer crumb mixture to a 9x13-inch pan and pat down evenly to form a flat crust. Place pan in oven and bake for 5 minutes. Cool on cooling rack while preparing pie filling.

Place cream cheese in a medium-sized bowl and beat until creamy. Slowly beat in the sugar and 1½ cups of the chocolate pudding. Cover the crust with the mixture and place in refrigerator for one hour to set. Remove and top with remaining chocolate pudding and raspberries.
