Fresh lime and dried cilantro provide all of the flavors of your typical taco Tuesday, with less carbohydrates and more fiber than your traditional side.
Or maybe you're looking for something that packs more of a punch. Curry powder is usually a mixture of turmeric, chili powder, ground coriander, ground cumin, ground ginger and pepper, and can be bought in mild, medium or hot strengths. A little goes a long way and gives the cauliflower a bright yellow coloring. The spice blend is rich in anti-inflammatory compounds and consuming it may help reduce oxidative stress, boost heart health, and improve blood sugar levels, among other potential benefits. The best part is that curry powder makes an excellent addition to a wide array of recipes.

Yield: 4 servings
Ingredients:
6 cups cauliflower florets
2 Tablespoons olive oil
2 cloves garlic, minced
1/4 teaspoon salt
1 teaspoon cumin
1/4 cup fresh cilantro
2 Tablespoons fresh lime juice
Directions:
Preheat oven to 425 degrees F.
Toss the cauliflower in a large bowl with olive oil, garlic, salt, and cumin. Spread cauliflower in an even layer on a large, rimmed baking sheet and roast in oven for 15 minutes. Stir, then roast for an additional 10 minutes. Remove from oven and drizzle with fresh lime juice and cilantro before serving.
